- APPLICATIONS
Sodium benzoate is an acidic preservative and has no bactericidal and bacteriostatic action in alkaline media. The optimal pH for its preservation is 2.5-4.0. The bactericidal effect of a 5% solution at pH 5.0 is not very good.
Sodium benzoate is more lipophilic and easily penetrates the cell membrane into the cell body, interfering with the permeability of the cell membrane, inhibiting the absorption of amino acids by the cell membrane, entering the alkaline reservoir of the ionized acidified cells within the cell body, and inhibiting the activity of the cell’s respiratory enzyme system, Blocks the acetyl-CoA condensation reaction and thus serves the purpose of food preservation.
